No Bake Cookies

These cookies are made with chocolate, peanut butter and oatmeal and will satisfy that chocolate or peanut butter craving. They are incredibly easy and fast to make.

Ingredients Needed:

  • Butter

  • Sugar

  • Cocoa Powder

  • Whole Milk

  • Salt

  • Pure Vanilla Extract

  • Creamy Peanut Butter

  • Old Fashioned Oats

Recipe Notes:

  • I always recommend using Old Fashioned Oats, technically Quick Oats are fine if that’s all you have use them but know that they are more likely to become out dried.

  • Its important to use Creamy peanut and not chunky this will make the No Bakes smooth.

  • Use a high quality cocoa powder this will greatly impact the overall taste of your cookies, I like to use Ghirardelli Dutch Processed Cocoa Powder.

  • Before you start its a good idea to measure out all the ingredients because once you add the peanut butter you are going to need to move quickly to avoid the mixture setting.

Tools Needed:

Recipe Ingredients:

  • ½ cup of butter

  • 2 cups of sugar

  • ¼ cup of cocoa powder

  • ½ cup of milk

  • Dash of salt

  • 1 teaspoon of pure vanilla extract

  • ½ cup of creamy peanut butter

  • 3 cups of Old Fashioned Oats

Directions:

  1. In a medium sauce pan melt ½ cup of butter over medium/low heat. Add in 2 cups of sugar and ½ cup of milk. Once all these are fully combined together sift in cocoa powder and whisk until there are no lumps.

  2. Bring this to a boil. Let mixture boil for 2 minutes and then remove from heat for 1 minute. Add in ⅛ teaspoon of salt and 1 teaspoon pure vanilla extract.

  3. Lay out parchment paper and set pot near where you will drop the cookies.

  4. Mix in ½ cup of creamy peanut butter. You will want to move quickly at this point. Does not need to be full mixed in before adding the Oatmeal.

  5. Add in the 3 cups of Old Fashioned Oats one cup at time. When I get down to my last cup I switch to using a half a cup measuring spoon and will go by the consistency of the mixture to tell me when I’ve added enough. You want the mixture to be slightly running, adding to many oats will make the cookies dry.

  6. Once Oats are adding use two kitchen spoons to scoop cookies onto parchment paper or foil. Let the cookies dry for about 30 minutes.

Storing Notes:

Store in an air tight container at room temperature.
